Hi there, 100% no deer in this area.
Couldn't find any tracks. The pellets are roughly 5-6mm from memory. The tree is wide enough for a small mammal to travel along but I couldn’t see any obvious route along its length it had bramble and bits of vegetation growing over it I that appeared undisturbed.

They also look like rabbit droppings - but on a tree trunk?

Im with Dave, probably a rabbit.
Hopped onto the tree trunk to get a better look around.
All this is assuming you confirmed they were actually droppings and not berries off a nearby tree or bush.
Mink scat are elongated with a tapered end, same as all Mustelidae like stoats, pine martens, weasels etc.

Ok I suppose yeah must be. It’s crazy though after spending so much time here the only sign of them are these ninja bunny droppings
