Miso paste
Recently discovered this, adds a wonderful umami depth of flavour to many dishes.

I made a salmon rizzoto the other night a added a sprinkling of miso sauce before serving, never done it previously but it it really lifted it off the plate to quote a famous chef.

It goes well with lots of things, I use Worcester Sauce and Mushroom Ketchup in many dishes but have started adding miso paste too, I’m using red at the moment but might try white next as I believe that is less salty.
